Kuro Sakata butchers knife from the Japanese brand Satake is a solid knife with a lot of attitude. The roughly hammered blade of 67 layers of VG-10 steel is made by hand and has a hardness of about 58 HRC. This steel can be honed very thinly, which means that you get an extremely sharp edge that keeps the blade sharp for a long time. Owing to the uneven surface of the blade, no vacuum is formed between the knife and the raw material. This means that the food immediately lets go of the blade instead of sticking to it, which tends to happen with completely smooth blades. The handle of burnt wood and details in 18/8 steel give you optimal grip, balance and stability.
