Celebrate Galentine’s Day with afternoon tea with your girlfriends

Valentine’s Day is for lovers, but Galentine’s Day is for celebrating the incredible women in your life. A relatively recent addition to pop culture, Galentine’s Day falls on February 13th and is all about cherishing friendship and female empowerment. Whether you’re single, taken, or somewhere in between, it’s the perfect excuse to gather your best girlfriends and shower them with love.

What is Galentine’s Day?

Galentine’s Day is all about celebrating female friendship. It is typically celebrated on February 13th but can be observed on any day of the day of the year. This annual festival of sisterhood is a celebration of female empowerment and a reminder for women to support and uplift one another.

Setting the scene for a memorable Galentine’s Day

A successful Galentine’s Day celebration starts with the right atmosphere. Galentine’s Day is all about celebrating the women in your life, their successes, achievements and unwavering support but most of all it should be about having fun and creating connection. Here’s how to create an unforgettable Galentine’s day brunch for the women in your life:

1. Choose a theme:

Pick a fun and empowering theme that reflects your group’s vibe. We choose a cosy and chic look with beautiful details picked up from Hilke Collection. Let the theme guide your decor and dress code but above all have fun with it.

2.  Set the table with style

•    Ideal for afternoon tea with your girlfriends we choose sophisticated, traditional teacups in black and white with touches of pastel pink.

•    Fresh flowers are a must, individual flowers in smaller vases scattered along the table can make the setting appear more intimate. Candles add height and warmth and these delicate offerings from Hilke Collection are inspired by nature and beautifully crafted.

•    Include handwritten name cards in the shape of a bow, for example or small, thoughtful favours on each place setting show your guests how much you care.

The star of the show: The Galentine’s Day cake

No afternoon tea celebration would be complete without cake. Store bought, homemade or a combination of the two, the centre of your Galentine’s Day table should be a show-stopping cake that’s as beautiful as it is delicious. Here’s how to make it extra special:

•    Choose a flavour everyone loves, such as vanilla, red velvet, or a decadent chocolate cake. We went with a simple vanilla sponge with mixed berry jam between the layers. You will find a recipe below.

•    Top your cake with fresh flowers, seasonal berries and macarons. We frosted the outside with a mixture of cream and jam for added flavour.

Ingredients

For the Cake:

•    200g unsalted butter, softened, plus extra for greasing
•    200g caster sugar
•    4 large eggs
•    200g self-raising flour, sifted
•    1 tsp baking powder
•    2 tbsp milk
•    1 tsp vanilla extract

For the Filling:

•    4 tbsp jam of your choice (we used a mix of blackberry and blueberry).

To decorate the outside:

•    200ml heavy cream
•    2 tbsp jam
•    3 pre-made macarons
•    Seasonal flowers (we used red and white heather).
•    Seasonal berries (Blackberries and blueberries).

Method

1.    Preheat your oven to 180°C (160°C fan). Grease two 20cm round cake tins and line the bases with baking parchment.
2.    In a large mixing bowl, beat the butter and caster sugar together with an electric whisk or wooden spoon until light, fluffy, and pale in colour.
3.    Gradually add the eggs, one at a time, beating well after each addition. If the mixture begins to curdle, add a tablespoon of the sifted flour.
4.    Gently fold in the flour and baking powder using a spatula or large metal spoon, being careful not to knock out too much air.
5.    Stir in the milk and vanilla extract to loosen the batter slightly. The mixture should have a soft, dropping consistency.
6.    Divide the batter evenly between the prepared cake tins, smoothing the tops with a spatula. Bake for 20–25 minutes, or until the cakes are golden, spring back when lightly pressed, and a skewer inserted into the centre comes out clean.
7.    Leave the cakes to cool in the tins for 5 minutes before turning them out onto a wire rack to cool completely.
8.    Once the cakes are completely cool, turn one layer upside down and spread one layer with jam (you may need to trim the top of the cake if it has formed a tall peak) and then place the other cake on top.
9.    To decorate the outside of the cake whip the heavy cream, be careful to stop before it separates. Spread the cream over the outside of the cake with a spatula. Dot teaspoons of your chosen jam sporadically across the cake surface and use the spatula to blend the jam and the cream. Arrange your macarons, berries and flowers on the top of the cake and voila!
