Simplify every meal of the week

Everyday life is filled with commitments and activities, so it is a nice relief to have a few recipes that you can be sure everyone will enjoy for any day of the week. Here are three recipes that are guaranteed to become everyday favourites:

1. Overnight rolls - for quick and easy breakfasts all week long

Breakfast with freshly baked bread? Yes please! These tasty and simple rolls are delicious and easy to make, perfect for both weekday and weekend breakfasts.

Recipe (8-10 rolls)

Ingredients:
25 g fresh yeast
500 ml cold water
2 tbsp olive oil
1 tbsp honey (can be omitted)
2 tsp salt
660 g wheat flour

How to:

  1. Mix all the ingredients into a sticky dough in a bowl, leaving room for the dough to rise until doubled in size. It should be like a thick porridge in consistency. I find it easiest to work with a wooden spoon to do this.
  2. Cover the bowl with plastic and place in the fridge for at least 8 hours.
  3. Turn the dough out onto a well-floured work surface and divide it into 8-10 pieces (depending on how big you want the rolls to be). Turn them in the flour - don't work the dough or you'll puncture them, and they'll stick together.
  4. Place the rolls on a baking tray lined with baking paper.
  5. Preheat the oven to 250°C and place the rolls in the centre of the oven when it is hot. Reduce the temperature to 220°C and bake the bread for about 15-20 minutes, until it has a nice golden crust.
  6. Take out and allow to cool before slicing.

2. Apple crumble - a Swedish favourite for fika

What could put the cherry on top of a sunny summer’s day better than a homemade apple pie? A tasty treat that allows you to make the most of all the apples in season and treat your family or friends to something delicious.

Recipe (8 - 10 servings)

Ingredients:
4 large apples
40 g brown sugar
1 tbsp ground cinnamon
200 g butter
120 g wheat flour
105 g oatmeal
90 g granulated sugar
1 pinch of salt flakes

How to:

  1. Preheat the oven to 200°c over/under heat.
  2. Peel, core and slice the apples, then place in an ovenproof dish. Sprinkle with caster sugar, cinnamon and salt flakes.
  3. Mix together the remaining ingredients (butter, flour, oatmeal, brown sugar) to make a crumble. Crumble the dough over the apples.
  4. Bake the pie in the middle of the oven for about 20-25 minutes, until it is a lovely golden on top. Remove and leave to cool slightly before serving with a little custard or ice cream.

3. Guacamole - to top off your Swedish taco Friday

Taco Friday – The Swedish tradition you might not expect! Fredagsmys or Cosy Friday is a Friday institution in Sweden. The tradition involves, as the name suggests staying in, getting cosy, eating comfort food and watching a movie. For many this means indulging in Tex-Mex. These tacos can be made in a variety of ways but one thing that tends to remain a staple is the addition of guacamole.

Recipe

Ingredients:
2 ripe avocados
1 large or 2 small garlic cloves
1 small tomato
1/2 red onion
1 tbsp freshly squeezed lime juice
2 tbsp olive oil
1 pinch of chilli flakes - to taste
Freshly ground salt and black pepper - to taste

How to:

  1. Start by slicing your avocados and then mashing thoroughly.
  2. Finely chop the garlic, tomato and red onion. Stir it together the remaining ingredients into the mashed avocado – Blend or mash to the desired consistency.
  3. Leave in the fridge for a while before serving, this is to bring out extra flavour. Serve with nacho chips.
