1. Smoked salmon and beetroot canapés

This simple starter is as colourful as it is delicious. The smoked salmon and the sweet beetroot is a beautiful marriage and the hint of horseradish gives the flavours an extra kick. The perfect finger food to pass around at any party so your guests can grab a quick bite!

Ingredients for 12 canapés

  • 80g cooked beetroot
  • 100g cream cheese
  • 1 tablespoon grated horseradish
  • 100g cold smoked salmon
  • 1 lemon
  • Rustic seed crackers (we used shop bought but of course you can make your own)
  • Caviar to garnish (we used Swedish löjrom or whitefish roe in English, but you can use any caviar or leave this out completely)
  • Dill to garnish

How to:

  • Place cooked beetroot, fresh horseradish and the cream cheese into a blender and blend until smooth.
  • Season with a pinch of salt and a squeeze of lemon.
  • Spread a good dollop of the beetroot and cheese mix on top of the crackers (if the crackers are large you my need to break them into smaller pieces, they should be roughly bite sized).
  • Tear the smoked salmon into shreds and lay on top of the beetroot mix.
  • Top with a small spoon of caviar and finish with a small sprig of dill.

2. Prosciutto and fig salad

The lovely winter salad makes the perfect simple starter. It comes together quickly, with little effort but looks beautiful and tastes even better.

Ingredients for one board (serves 2-4)

  • 100g sliced prosciutto ham
  • 3-4 fresh figs
  • 150g blue cheese
  • Mixed salad leaves and baby spinach
  • Liquid honey

How to:

  • Grab yourself a lovely wooden food tray or chopping board.
  • Pile the mixed salad leaves and baby spinach in the middle of the tray.
  • Cut your fresh figs into quarters and dot them over the board with the salad leaves.
  • Take your slices of prosciutto ham and scatter them around the tray.
  • Crumble over the blue cheese and finally drizzle the figs and blue cheese with honey.

3. Creamy chevre rounds with honey and roasted walnuts

This rich and creamy goats cheese starter is so comforting and tasty. This one is easy to bring together in just a few minutes and would go beautifully alongside the smoked salmon canapés.

Ingredients for 10

  • 180g Semi ripened chevre cheese (so it has a soft edible rind) – one 180g roll made 10 individual rounds so adjust the quantity depending on how many you would like.
  • Liquid honey
  • 40g chopped walnuts
  • Pea shoots to garnish

How to:

  • Start by setting the oven to 180 degrees
  • Roast your walnuts by placing them in a dry pan over a medium high heat toss the walnuts in the pan until they start to smell wonderfully, be careful not to let them burn or they will taste bitter.
  • Cut your chevre roll into rounds about 2cm thick, sprinkle the rounds with the chopped and roasted walnuts. Drizzle everything with a good serving of honey and pop them in the oven for a few minutes until they are melting slightly.
  • Garnish the goats cheese rounds with pea shoots once they have started to cool.

4. Cheesy cheddar baskets filled with an avocado and lime cream

Impress your guests with these homemade and edible baskets that are surprisingly simple to make. The creamy avocado cuts perfectly through the sharp taste of the cheddar – just make sure your guests leave you some to enjoy!

Ingredients for 12 cups

  • 1 Block of cheddar
  • 2 ripe avocados
  • 2 tablespoons of cream cheese
  • Juice and zest of half a lime
  • Salt and black pepper

How to:

  • Set the oven to 180 degrees
  • Grate the cheddar into 12 small piles on a baking sheet lined with greaseproof paper
  • Bake the cheese in the oven for around 5 minutes. Timing is key so make sure you keep an eye on them and remove from the oven just as the cheese starts to turn golden.
  • Allow the cheese rounds to cool for a few seconds, be sure to check with the use of a spatula when they are starting to harden. Use an upturned muffin tin or glass to form the cheese into a basket. You will need to move quickly as they harden fast. Allow the cheese to cool completely and then remove from the muffin tin.
  • Whilst the cheesy baskets are cooling make the avocado cream. Place the avocado, cream cheese, lime zest and juice in a blender and blend until smooth. Season with salt and pepper.
  • Spoon the mousse into the cheesy baskets and garnish with some fresh basil.
